This organic Spaghetti pasta is made using an ancient grain known in Italy as Khorasan (Triticum turanicum). Khorasan is an ancestor of modern wheat and grew in Italy since before Roman times. This ancient grain was displaced by modern wheat varieties and was almost abandoned. An effort by our farmers in the 1990s to revive the fortunes of this grain has seen it regain favour with people conscious about their health and the health of the planet. Khorasan has never suffered the genetic alterations that modern wheat varieties have undergone, often associated with problems with digestion. These grains are made into pasta by a certified organic manufacturer in the traditional method, slowly shaping the pasta through bronze dies. This old fashioned technique creates a texture that captures the pasta sauce. Solleone Khorasan pasta has a delicious taste and has a more delicate and light texture than modern industrial pasta. It is well suited to sauces with a wonderful mouth-filling flavor such as Solleone’s pasta sauces, which together create truly authentic and delicious Italian meal. This organic Penne pasta is made using the ancient grain of emmer wheat (Triticum dicoccum) known in Italian as farro. Emmer wheat is an ancestor of modern wheat but when the new varieties of wheat appeared after WWII, emmer wheat proved harder to harvest and less suited to modern agricultural chemicals. So the grains, that supported the people of Italy since before Romans times, were abandoned and almost forgotten. Thankfully, there were farmers who held onto their farming traditions and in the 1990’s an effort was made to collect and save the remaining emmer wheat varieties. These grains are made into wholemeal pasta by a certified organic manufacturer in the traditional method of stone-grinding the grains to retain nutrition and flavour, and then slowly shaping the pasta through bronze dies. This old fashioned method creates a texture perfectly suited for capturing the pasta sauce. Foods made with emmer wheat have been found to be easier to digest than similar foods made with modern varieties of wheat. .
